Poaching chicken breast

Add chicken breasts to cold water.

Add aromatics of choice; cilantro, or ginger or green onions or bay leaf

Bring water up to 140 degrees and simmer until internal temperature of chicken is also 140 and then remove or simply turn the heat off and leave chicken in poaching liquid

Alternate method:

Add chicken to cold water.

Add aromatics of choice; cilantro, or ginger or green onions or bay leaf

Once water boils, simmer for 10 minutes. 

Take pot off stove and let chicken cool in water.
