4 artichokes
Slice off the top of the artichoke and cut and even the stem to 2-3 inches. Place top up in an inch of water in a heavy bottom pan big enough to hold and deep enough to cover. Slice a lemon and put slices in boiling water. Check at 45 minutes. Artichoke will be done when stems are easily and pierced with a fork.

We serve traditionally with Awesome mustard sauce although Hollandasie or Ajioli is traditional.
