Avocado smash

1 avocado

4 oz feta cheese

Juice of 1 lemon

1 tbs lemon olive oil

1 tsp kosher salt

2 tsp cracked black pepper

1 bunch cilantro

2 scallions

Mash all together with a potato masher or simply pulse in the processor. Make sure you keep it chunky

Fold in chopped scallions

Can be spread on bread or serve with a crudite of veggies. My favorite way is with good bread and a soft boiled egg for breakfast.
