B School Curry

1.6 pounds of pork houlder in 3/4 inch cubes

1 tbsp of canola oil

5 cloves of garlic, sliced

1 onion , minced

1 tbsp of commercial curry

Water

1/2 small can of contadina tomato paste

2 chopped, boiled potatoes

1/4 cup milk to taste

Peel, cube and boil potatoes until done.

Cover bottom of saucepan with oil and heat at medium

Add 1/2 onion and cook until soft

Add sliced garlic and curry powder and enough water to make paste

Reduce heat and stir until oil separates from curry

Add meat, raise heat and brown meat fro 15 minutes. Note: add just enough water so curry does not burn

Add 1/2 can of contadina paste and 2nd half of onion and cook for 10 minutes

Add boiled potatoes, bring to simmer and cover for 10 minutes

Add milk, salt and pepper to taste

Simmer uncovered until sauce concentrates and is properly thick.

Serve
