Bacalhau a Bras

1 lb Salt Cod

1 lb Potato, sliced into short , thin french fries

Oil for frying potatoes

3 onions, sliced into very thin rounds

8 cloves garlic

4 Tbs olive oil

6 eggs, whipped with fork

Handfull of black olives

Parsley , minced

After having soaked cod for 36-48 hours with multiple water changes , place in a receptacle and cover with boiling water. Cap receptacle, wait 15 minutes, flake cod and set aside.

Deep fry french fries at 300-320 until just slightly golden and then drain them on paper towel

Slowly fry garlic and onions in olive oil until soft and slightly brown

Add cod to onions and mix well with wooden spoon so cod absorbs the olive oil

Add potatoes and gently mix

While still slowly frying mixture add hand beaten eggs and continue to mix with a fork as you would scrambled eggs

When the eggs are soft but cooked remove from pan , transfer to serving plate,  add parsley and sliced olives and serve
