8clove garlic, sliced
1/4 cup of olive oil
2 .5 onions, sliced
4 hard boiled eggs
1lb of reconstituted cod
3/4 lb of potatoes, peeled
2 cups of milk
1 bay leaf
40 Black olives, sliced. 1/2 for layers and remainder to sprinkle on top.
Salt and pepper to taste

Place cod in water in a covered pot and bring to simmer. Once simmering turn off heat , cover and wait 15 minutes or until bacalau flakes easily.
Boil and peel eggs seperately
Boil potato in its skin and when soft (toothpick test) peel, slice and set aside
Once cooked, shred the bacalhau into flakes and discard skin and bones. Put the chips in a deep container, cover with hot milk , add bay leaf and let marinade for 2 hours.
Fry the onion and garlic in the olive oil. When the onion has browned, taste for salt then add the cod and potato slices. Gently mix and heat up, but dont fry any further.
Add to this mixture half of the eggs and olives and then place mixture in an oven proof receptacle , preferably earthenware.
Bake at 425 for 15-20 minutes and serve still hot, on the dish in the oven, sprinkled with chopped parsley and garnished with slices of boiled egg and remaining olives.

This is Moniques recipe. I would use 2/3 cup of olive oil rather than 1/4. I have also seen a recipe where 1/4-1/2 cup of the reserved milk was added to mixture before heating in oven.
