Banderillas de Boquerones

20 green olives, pitted

20 Boquerónes

20 piparra peppers

1 green pepper, minced

1 onion,minced

6 tbsp extra virgin olive oil

3 tbsp white wine vinegar

To each wooden skewer add an olive, a pepper and a rolled up boquerone.

Place the skewers around the outside of a flat plate with the tips pointing in

Mince peppers and onion as finely as possible , make a vinaigrette with the oil, vinegar and salt, add the vinaigrette to the minced peppers and onion.

Spoon the mince & vinaigrette generously over the banderillas and serve.
