Bitter Orange and Habanero Salsa with Red Onion

3/4 cup of finely minced red onion

1.5 habanero chiles

1 tsp salt

1 cup of bitter seville orange juice or 1/3 cup of lime and 2/3 cup of orange juice

Emulsify the habaneros, juice and salt

Add to minced onion

Wait two hours and serve
