1/2 lb sugar
1/2 lb peeled almonds
6 whole eggs
6 egg yolks
1 /4 tsp cinnamon
4 oz flour
confectioners sugar
Process almonds as fine as you can
Mix in with the almonds the whole eggs, egg yolks, sugar &cinnamon
Mix as vigorously as you can with a woodedn spoon. This will involve using your whole arm not simply your wrist.
Mix in flour to batter again without beating it in
Let this mass rest for 30 minutes
Grease and flour a 11.5 inch tart mold with a removable bottom
Pour mixture and put it in a 400 for about 15 minutes or until a toothpick comes out clean and easily
Cool on a rack
Sprinkle with confectioners sugar
Worked perfectly although next time I will add more sugar (3/4 lb ) and will toast 1/2 of the almonds before grinding. I am trying to resist using artificial almond and vanilla extracts
