1 cucumber peeled, and seeded
3 cloves garlic cloves, minced
1 teaspoon kosher salt
1 cup plain Greek yoghurt
1/4 cup scallions, finely sliced
2 tbsp fresh mint
1 teaspoon lemon juice
1 loaf baguette
Shred the cucumber.
Drain and squeeze out all liquid from shredded cucumber
Crush the garlic to a paste with the salt and mix into the yogurt, along with the cucumber, scallions, mint, and lemon juice.
Taste for seasoning and serve as a dip with sliced bread.
