Champinones Al Ajillo (Garlic Mushrooms)

3 cloves of garlic

3 tbs olive oil

1.5 tbs flour

1 cup of broth

1/2 of a dried red peppers cut in 3 pieces

2 tbs chopped parsley

2 tsp lemon juice

1/2 pound small button mushrooms whole or halved.

In a skillet , heat 2 tbs of oil until it is very hot.

Add the mushrooms and stir fry until mushrooms are lightly browned.

Add the the garlic and pepper and 2 tbs of the oil until garlic just starts to turn opaque.

Stir in the flour and cook a minute.

Gradually pour in the broth, lemon juice and parsley.

Simmer for 5 minutes , while stirring until smooth and thickened.

Adjust salt, add freshly ground pepper and parsley and serve.
