1/4 cup canola oil
12 cloves garlic, finely chopped
1 small onion, minced
3/4 cup of coffee beans enclosed in a cheese cloth satchel
1/4 cup finely chopped cilantro
1 tbs cumin, ground
1 tsp chile powder
1 tsp crushed red pepper flakes
1 jalapeno minced
Zest and juice of 1 lemon
1 cup ketchup
3/4 cup red wine vinegar
1/2 cup tomato paste
1/4 cup dark brown sugar
2 tbsp kosher salt
2 tbs ground black pepper
Heat oil in a 4 qt. saucepan over medium high heat
Add onion and cook until soft and translucent
Add, garlic, cilantro, cumin, chili powder, red pepper flakes, jalapeno, zest and juice and cook for 2 minutes
Add ketchup, vinegar, paste, sugar, salt, coffee beans, and pepper and bring to a simmer
cook to marry flavors for an additional 10 minutes
