Cuban Avocado, Watercress and Pinapple Salad

Dressing:

3 garlic cloves, minced

1/4 cup extra virgin olive oil

2 Tbs lime juice

1 tsp Cumin, freshly ground

1 tsp kosher salt

Feshly ground black pepper

Salad :

1 bunch watercress, cleaned, yellow leaves removed and only use tender leaves and stems

1/2 pinapple peeled, cored and carmelized on frying pan or grill

1 large Haas avocado , cut in half longitudinally, core removed , carved out of shell with wide spoon and sliced thinly

1/2 small red onion thinly slivered

Dressing:

Combine dressing ingredients in small bowl and whisk to combine or emulsify with hand emulsifier.

Taste for seasoning

Salad Assembly:

Place watercress in small bowland toss with half salad dressing. Arrange on large platter or indivisial plates

Add Pineapple and Avocado to same bowl and add remainder of dressing. Toss and then mound over watercress

Garnish with thin slivers of red onion and serve
