1 1/2 cups bread crumbs, panko
8 eggs, hard-boiled, peeled and sliced
1 pound fresh, sliced
2 tbsp butter
1 onion finely diced
6 slices bacon, chopped fine
2 cups sour cream
2 tbsp parsley, chopped
2 cups Cheddar cheese, aged, grated
Preheat oven to 375°.
Grease a 13x9 inch pan. Spread breadcrumbs on bottom of pan. Top with egg slices.
Sauté mushrooms and onions in butter until crisp tender.
Combine with bacon, sour cream, and parsley; season with salt & pepper to taste.
Spread this mixture over eggs.
Top with grated cheddar. Bake until heated through and cheese is bubbly, 30-45 minutes.
