Fava Beans with Garlic, Shallots and Lemon Olive Oil

2 pounds of fave beans

2 Tbsp of olive oil

2 large shallots, finely diced

4 cloves garlic, minced

Salt & Pepper to taste

Lemon infused olive oil for drizzling

Prepare beans:

Remove beans from shell by clipping off the end and by "unzipping" the shell by pulling on the seam

Boil enough water to blanch the beans

Prepare an ice bath to quench the cooking process once blanched.

Add to boiling water for 1 minute and then add to ice bath

Pinch the end of the whitish pods without the green "beret" and pop out the bright green and now fully prepared fava beans

Frying the beans:

The beans for the most part are already cooked. The object now is to add more flavor and not overcook

Heat olive oil and soften shallots

Add minced garlic and fry an additional minute

Add fava beans and cook for a minute or 2 and taste as you go so as to not overcook

Flavor with salt & pepper

Drizzle with lemon olive oil and serve immediately.
