Five Onion Soup

6.5 cups of good homemade chicken stock

2 large leeks, split lengthwise and cleaned

2 large onions

2 cloves of garlic

1.25 cups of milk

Salt and pepper to taste

6 spring onions

2 tbsp chives

Wash, trim and roughly chop the leeks and onions

Peel and mice the garlic

Place leeks, onion, garlic and stock in a saucepan

Bring to a boil, then simmer covered for 15-20 minutes

Liquidize the vegetables with an immersion blender and return to the pot

Add milk, stir and taste for salt and pepper

Can be made in advance to this point

Return to a boil, add the finely sliced green onions

Simmer for another two minutes, pour into 6 warmed bowls and top with chives
