Fresh Mango Chutney

3 tsp black cumin

1 tsp coriander seed

3/4 tsp cumin seed

1/2 tsp turmeric

1/2 tsp cardamom seeds

1/4 tsp ground cinnamon

3 ground Malagueta peppers or alternative (1.5 tsp)

1/2 tsp salt

2 Tbs. oil

2 Tbs. ginger, minced

6 cloves of garlic, minced

5 large ripe mangoes (approx. 6 cups cubed)

1 cup of sugar

1 cup of white vinegar

Heat in a pan until fragrant the black cumin, coriander seeds and cumin seeds and then add to spice grinder.

Also add to grinder the turmeric, cardamom, malagueta peppers, cinnamon and salt.

Grind the spice mixture

Heat oil and then add minced ginger and garlic and cook for 1 minute

Add spice mixture and saute constantly for 1 minute

Add vinegar, sugar and mango and stir thoroughly

Bring to boil, cover and reduce to low simmer and cook for 1 hour until thickened
