2.5 lbs Halibut steak
3 tbsp olive oil
2 tbsp lemon juice
2 tbsp fresh oregano
2 tsp dried oregano
4 cloves minced garlic
3 diced shallots
Salt & pepper
Mix all ingredients and marinade the halibut for 4-8 hours
Grill on a hot and well-oiled grill for 6-8 minutes then turn and grill an additional 5 minutes. Shoot for an internal temperature of 115-120 as it will rise an additional 5 degrees after having been taken off grill. It will be opaque, slightly pink and flake easily. Fairly unforgiving fish as it can easily dry out if internal temperature exceeds 125.
