Guacamole

4 small Haas avocados

1 small onion, finely diced

1/2 jalapeños coarsely chopped, with seeds

1 /2 cup cilantro leaves, finely chopped

1 tomato, skinless finely chopped

1/4 cup lime juice

1/2 tbsp cumin

In a blender or mortar blend the tomato, lime juice, jalapeño, two Tablespoons of coriander leaves, cumin and salt.

If using a mortar add the avocados by scooping out small spoonfulls. Mash together with other ingredients. Keep the guacamole chunky.

Fold in the finely diced onion and coriander and serve.
