300g dried chickpeas
1 tsp baking soda
1.5 tsp salt
2 cloves of garlic chopped
250g tahini
2/3 cup lemon or more according to taste
Wash chickpeas, cover with water, add baking soda and soak overnight
Drain chickpeas and place in a large saucepan, cover with fresh water, and bring to boil.
Reduce heat to medium, cover and simmer for 1 hour or until chickpeas are very soft. Drain water when done.
Process salt and garlic in food processor.
Add chickpeas and blend until smooth, gradually add tahini and lemon juice.
Stop the food processor every now and then to combine the mixture
Taste for salt, lemon, garlic. Don't be afraid of going heavy-handed with lemon and garlic!
