James Beard Fool-proof Processor Pasta Dough

1.5 Cups all -purpose flour (if ravioli or other stuffed pasta double zero (oo) pasta is recommended

1/2 tsp Diamond Crystal kosher salt

2 whole eggs

1 Tbs olive oil

Put the metal blade in place in the processor

Add the flour, salt and oil to the processor bowl and process for 8-10 seconds

Beat the eggs lightly with a fork

Add the eggs and process for about 15 seconds, or until the dough is pliable but not damp or sticky

-If it seems to sticky, add 1 or 2 Tbs flour and process for and additional 6-8 seconds

-If it seems too dry, sprinkle with a few drops of water and process to blend well

Turn out onto a lightly floured surface

Knead with the heel of your hand for 3 to 5 minutes until it forms a smooth, compact ball of dough

Divide teh dough into two equal pieces and cover one with a dish towel to keep it soft and pliable until needed

Flatten and shape teh second piece of dough into a compact disc, ready for rolling
