Japanese Salmon Tartare

3/4 Lb salmon, diced

Diamon Crystal salt or Flaky Sea Salt

Fresh ground Balck pepper

1 tsp. Olive Oil

1/2 tsp. Roasted Sesame Oil

1/4 cup minced Red Onion

2 Tbs. Scallions, minced

Zest from 1/2 lemon, grated

2 Japanese Cucumbers

2 Tbs. Tobiko (Flying Fish Roe), Masago (Smelt Roe),or Ikura (Salmon Roe)

Several light sprigs of Dill

Dice salmon and put it into a mixing bowl

Add salt and pepper to taste

Mix in Olive Oil and Sesame Oil

Add Red Onion, Lemon Zest and Scallions and mix

Taste and adjust according to your taste

With wide vegetable slicer, slice the cucumbers and arrange the widest ones parallel and slightly overlapping on each plate

Place a 3.5-inch diameter, 2-inch high ring on one end of the cucumber array

Fill ring with Salmon mixture and press down until even

Pull off ring and top with Ikura, Tobiko or Masago

Add a sprig of Dill as garnish and serve
