Jessallyn's Banana Bread

1/2 cup butter at room temperature

3/4 cup of raw sugar

1 egg, well beaten

1.5 cups flour

1 tsp baking soda

3/4 tsp salt

1.25 cups mashed banana (if whole bananas with skins are thrown in the freezer they become mushy, easy to peel and perfect for this recipe)

1 tsp vanilla

1/4 cup yogurt

Granulated sugar for sprinkling over finished bread

You will need 3 bowls, 2 medium and 1 large

Cream butter, brown sugar and vanilla together by hand or mixer in a large bowl until uniform

Add egg, mix well

In medium bowl, stir together the flour, baking soda and salt

In second medium bowl, mix together the banana and yougurt

Mix a little of the flour into the butter mixture and stir

Mix a little of the banana mixture into the butter mixture and stir

Continue alternating the mixing in of these last two ingredients until well mixed

Once uniform and moist stop as you do not want to overmix

Pour into well greased loaf pan

Bake at 350 degrees for 50-60 minutes. Toothpick will come out clean when done. Crust should be brown and edges pulling away at sides

Cool in pan for 10 minutes before removing from pan

Sprinkle with granulated sugar
