Lime-Orange Salsa

4 oranges, navel

1 red onion, small, finely chopped

1/4 cup lime juice, fresh

1/4 cup cilantro leaves, finely chopped

1/3 jalapeño coarsely chopped, with seeds (optional)

1 clove garlic clove, finely chopped

salt & pepper to taste

With a sharp knife, remove the skin and white pith from oranges and discard. Working over a medium size bowl to catch the juice, cut the orange segments from their surrounding membrane. Chop the segments coarsely. Add the juice in bowl, and stir in onions, lime juice, cilantro, pepper, and garlic. Stir to combine. season with salt and pepper to taste.
