Melon & Arugula Salad

1.5 tbsp fresh lime juice

1/2 tsp smoked paprika

1/4 tsp salt

Freshly ground pepper

5 Tbs extra virgin olive oil

1 melon, cut into 1 inch pieces (can use Cantaloupe, Piel de Sapo,or Honeydew)

1 large bunch arugula , coarse stems discarded (1.5 lb)

1/2 lb sliced Serrano or Prosciutto ham cut into 3/4 wide strips

Whisk together lime juice, paprika, salt and pepper in a bowl and add oil in a stream while whisking.

Toss melon with half dressing in a bowl

Toss arugula and ham with remaining dressing in a separate salad bowl

Toss the melon and jamon with the arugula in the salad bowl

Serve immediately
