Melt in Your Mouth Blueberry Cake

2 eggs, separated

1 cup sugar

1/2 cup butter

1/4 teaspoon salt

1 teaspoon vanilla

1 1/2 cups flour

1 teaspoon baking powder

1/3 cup milk

1 1/2 cups blueberries

Beat egg whites until soft. Add about 1/4 cup of the sugar to keep them stiff. 

Cream butter, add butter, salt and vanilla. Add remaining sugar gradually. 

Add in unbeaten egg yolks and beat until light and creamy. 

Add sifted dry ingredients alternating with milk. 

Fold in beaten egg white. Fold in blueberries. (take a bit of the flour and gently shake blue berries in it so they wont settle in the bottom)

Pour into greased 8 by 8 inch pan. Sprinkle top of batter lightly with granulated sugar.

Bake at 350° for 50-60 minutes.
