Miso Soup

3 cups Dashi

3 Tbsp white Miso Paste or in combination with red Miso if you would like stronger flavor

1/4 pkg (3 oz ) soft tofu cut into small cubes

1 green onion, thinly sliced

1 Tbs dried wakame seaweed.Soaked

Soak the wakame in water for 15 minutes. You will be amazed at how much it expands

Pour the Dashi into a saucepan and bring to a boil.  Turn the heat off.

Add half the miso to a ladle, dip ladle in dashi and allow some dashi to enter ladle. Stir with chopsticks and allow mixed liquid out and new dashi to enter. Repeat until all miso has been mixed and incorporated.

Return to a simmer, being careful not to boil the miso soup. Add the tofu and wakame and cook for another minute or until heated thoroughly but not boiling.

Remove the saucepan from the heat and ladle into soup bowls. Garnish with green onions and serve immediately.
