Mocha Ice Box Roll

1/2 pint of whipping cream

2 tbs cocoa powder

2 tbs sugar

1.5 tsp instant coffee

1 2.5 oz package of chocolate wafer cookies

Semisweet chocolate shavings for garnish

Combine cream, cocoa, sugar, and coffee in small bowl and whip until mixture mounds slightly

Using half the cream mixture, spread chocolate wafers with cream mixture and arrange in stacked horizontal rows with each row consisting of 5 or 6 of these cookies

Lat down rows side by side until run out of cookies

Frost the entire outside of these rows with remaining whipped cream and garnish with shaved chocolate

Freeze until firm and remove from freezer one hour before serving

To serve cut roll or cake diagonally in one inch slices
