I bar of semisweet chocolate (9 ounces or 200 grams)
6 eggs
Pinch of salt
3 tbs butter
6 tbs sugar
1/2 cup of cream
Break chocolate into pieces
Separate whites from yolks
Beat egg yolks and sugar together until smooth and homogenous
In a sauce pan add the milk, butter and chocolate and heat over low heat, taking care not to burn chocolate. You can take pan off heat if necessary
This can also be done in a bain marie or even a microwave oven
Add the yolk & sugar mixture , mix in well and continue cooking for a few minutes until you have a homogenous mixture
Remove from heat
Only after this mixture is complete , beat egg whites and pinch of salt into stiff peaks and fold them in
Pour into dessert bowls and place in refrigerator for at least 3 hours
