Mustard-Caper Butter

6 cloves garlic

Kosher salt and freshly ground pepper

1 Tbs unsalted butter

1 tbs extra virgin olive oil

1 Tbs Dijon style sharp mustard

2 Tbs drained small capers

Grated zest of 1 lemon

Plenty of Marjoram, Dill or any herb that suits your taste

Combine all ingredients except garlic

Pound the garlic and 1 tsp of salt in a mortar until smooth and then stir into mixture

Serve at room temperature
