My Hellman's Mayonnaise Knock-Off

4 tsp. white vinegar

1/2 tsp. lemon juice

3/8 tsp. sugar

1.25 tsp. salt

1 egg

1 cup vegetable oil

Add all the ingredients except the oil into a container that will fit an immersion blender

Set blender at medium speed

Have the vegetable oil ready

Emulsify the egg, vinegar, lemon juice for about 5 seconds

Keep emulsifying and slowly and constantly drizzle in the oil

Serve

Folding in Sriracha to the finished Mayonnaise will give you spicy mayo.
