2 1/4 lbs mixed dry fruit
1/4 pound dates, chopped
1/4 pound prunes, pitted and chopped
8 ounces butter
3/4 pound brown sugar
2 tbsp syrup , golden or maple
1 cup water
1 cup sherry, amontillado or fino
1 1/2 tbsp mixed spice
20 almonds, toasted, crushed
3 eggs
2 teaspoons grated lemons rind
3 cups flour
1 1/2 cups flour
1 teaspoon baking soda
2 tbsp brandy
Put into saucepan fruit, butter, syrup, sugar, mixed spice and 1/2 sherry. Bring to a boil then simmer 3-4 minutes. leave to go cold.
Beat eggs well, add to fruit, plus remaining sherry, soda dissolved in a little hot water, chopped almonds and lemon rind. fold in flour sifted together.
Turn into prepared 9" pan lined with brown paper or greased baking paper.
cook at 325°-turn down to 300° for 2.5 to 3 hours.
Pour brandy over when out of oven
