1 onion, minced
1 cup cilantro leaves, finely chopped
3 tomatoes, diced (Roma)
1/3 cup white vinegar
1 jalapeno coarsely chopped, with seeds
salt to taste
Mince tomato, onion and cilantro and combine. Combine vinegar and jalapeño and blend before adding to vegetable mixture. Wait 1/2 hour for flavors to combine . Taste for salt and serve.
