Crispy Pork Belly

1Lb. Pork belly including skin

Vinegar

Salt

Boil pork at medium heat for 15 minutes

Poke the skin all over with a toothpick. The more the better including the edges . The goal is not to penetrate through the skin layer

Dry skin thoroughly and salt teh entire belly including the skin

With the skin side up,create an aluminum foil boat that holds the belly snugly but keeps the skin exposed. I place boat inside a casserole in case of leakage.

Brush skin with white vinegar

Set oven for 375

Roast at 375 for about 1 hour and 45 minutes

Take out of oven, apply more vinegar and return to oven

Broil at high heat for 5 minutes watching carefully to avoid burning

On cutting block turn belly upside down and cut into bite size pieces with your sharpest knife
