Ramen Pork Belly (Chashu)

1.25 Lb. round log of pork belly or a slab cut into several pieces

1 Tbs. vegetable oil

1 Knob ginger

1/2 Cup Sake

1/2 Cup of light soy sauce (Isukuchi)

1 cup water

1/3 cup sugar

3 Scallions, sliced

Sear the roll or slabs well with the vegetable oil and set aside

Make a braising mixture by adding all ingredients to thick bottomed pot the after attaining boiling temperature, reduce to a simmer

Add Pork to simmering mixture and cook in covered pot for 2 hours or until fork tender. Rotate every 1/2 hour

When done remove, strain and when adequately cooled, place pork and liquid in a plastic bag and marinade overnight in refrigerator.

Next day slice log into 1/4-inch thick slices. Do the same if you have slabs.

When about to serve, broil for several minutes until caramelized and crispy
