Salsa Aji Caleño

3 fresh habanero peppers

1.25 cup white vinegar

2/3 cup water

1/2 teaspoon cumin

1/4 cup vegetable oil

1/2 cup finely chopped coriander

1/2 cup finely chopped opinion

1/2 cup coarsely chopped tomato

1/2 cup finely sliced scallions

1 chopped avocado (optional)

1 teaspoon sugar

2 teaspoons salt, kosher or rough sea salt.

In a blender combine peppers, salt , vinegar, and water.

Add remaining ingredients. Toss to combine.

Serve in 1/2 hour. Taste optimal after several hours.
