3 tbsp fresh lime juice
2 tbsp extra-virgin olive oil
1 teaspoon ground cumin
2 lbs navy beans, canned
4 garlic cloves
1 jalapeño mashed, with seeds
3/4 cup red bell pepper, finely chopped
3/4 cup cilantro leaves, finely chopped
1/4 cup green onion minced
1/2 teaspoon salt
Mash the lime, oil, cumin, garlic , salt ,and jalapeño in a mortar & pestle or blender. Add beans to mixture and blend further. Stir in cilantro, bell peppers and spring onions.
