4 sweet potatoes
6 tablespoons butter (3/4 stick), at room temperature
1/4 cup well stirred tahini
4 limes (2 for sauce, 2 for serving)
2 tbsp soy sauce
1 tsp sesame oil
1 clove grated garlic
Tabasco (optional)
Cilantro (for serving)
Scallions (for serving)
I like this as an easy but flavorful weeknight meal that allows me to imagine I'm eating healthy.
Put 1-2 inches of water in a large pot, insert steamer basket, steam until potatoes are tender, approximately 45 minutes. (You could also bake them, or, if in a pinch, microwave them).
Mix room temperature butter with lime juice, tahini, garlic, soy sauce, sesame oil, and optional tabasco. Keep stirring, it will incorporate!
Cut those bad boys open and slather on a generous serving of the tahini lime butter.
Sprinkle on chopped cilantro and scallions.
Serve with lime wedges for additional flavor.
The tabasco is a recent experiment. Tons of room to play around with this one. Pop the butter in the micro for 20 sec to warm it up before mixing if you're in a rush.
