The Best Salad Dressing in the World

1 tsp kosher salt and freshly ground black pepper

1 tbsp strong ,but not grainy, dijon mustard

3 tbsp tarragon vinegar

1 tbsp balsamic vinegar

3 filets of anchovies mashed

2 tbsp extra virgin olive oil

4 tbsp corn oil

1 Green onion, finely sliced

1 tbsp finely minced shallot

1 finely minced garlic clove

1 tbsp finely minced parsley

Add salt and pepper to mixing bowl

Add mustard

Whisk in vinegars and anchovies very well or they will separate when oil is incorporated

Continue whisking in oil , bit by bit

Add shallots, green onion and parsley

Serve over a variety of lettuces; escarole, sliced endive (remove outer leaves and cut out little center)

Add sliced boiled egg, avocado , raw sliced mushrooms and tomato
