Tuna Ceviche

1 pound raw tuna

1/2 cup lime juice

1 tomato, finely chopped

1 onion, minced

1 avocado, chopped

1/2 cup coriander leaves, finely chopped

20 saltine crackers

Grind tuna, combine with salt and lime juice for 8 hours.

In a separate container, 1/2 hour before serving, combine onion, tomato, avocado and coriander.

Combine with tuna, place in a small serving bowl and serve with saltine crackers, extra lemon and tabasco. 

Do not prepare a plate of tuna topped saltines for your guests as the saltines become too soggy very quickly
