Tuscan Chicken

4 boneless chicken breast halves

1/4 cup butter

2 tbsp brandy

3 medium tomatoes, wedge cut

1 onion sliced

8 cloves of garlic, sliced

1/2 lb sliced mushrooms

2/3 cup of white wine

Chopped parsley

Cut chicken into cubes

Heat butter in large skillet until foaming. Add chicken and cook until meat just firms up and turns white ( do not overcook). Remove

Add onions, cook until opaque and soft

Add garlic and cook until just before turning gold

Add tomatoes and cook for 15 minutes or until most liquid evaporates

Add mushrooms , wine and brandy , bring to a boil and then simmer until mushrooms are almost done (about 15-20 minutes)

Add chicken , cover and simmer an additional 3 minutes

Serve on a bed of grated zuchini
