Tzatziki

1 cucumber peeled, and seeded

4 cloves garlic, mashed

1 teaspoon salt, kosher or rough sea salt.

1 cup whild milk Greek yogurt (thick style)

1/4 cup scallions, finely sliced

2 tbs mint, finely chopped (optional)

Lemon, salt and pepper to taste

Grate the cucumber, sprinkle with 1/2 salt, and place in colander for 30 minutes to draw out water.

Crush the garlic to a paste with the remaining salt and mix it into the yogurt, 

Add the cucumber, scallions, pepper, and lemon juice. taste for seasoning, and serve as a dip with the bread slices.

It should have the consistency of sour cream
