1 small ripe watermelon approximately 6 pounds
3 limes juiced, including pulp. Approximately 1/3 cup
1/2 cup minced fresh mint
1/2 cup crumbled feta cheese (optional)
Cut skin and pith of watermelon until left with round red (or yellow) ball of watermelon
Cut into 3/4 inch squares and toss into colander to drain
Add drained squares into container
Add the lime juice to taste
Mince and add the mint
To transform the sweet salad into one with more savory notes add the crumbled feta
Toss and refrigate until cold. Toss repeatedly whild chilling
Unless you have added Feta, the leftover salad can be blended and used as base for an innovative Daiquiri with rum or vodka.
