12 small red potatoes, washed and un-peeled
2 ½ cups water
2 tablespoons salt
In a medium pot, place the potatoes and water.
Turn the heat to medium and add the salt.
Partially cover the pot and cook for about 40 minutes or until all the water has evaporated. Pay attention near the end of the evaporation and make sure to swirl the pot to cover all the potatoes with the salt.
Serve with everything Colombian, salsa aji, chicharron.
