Curried Pork Satays

Curry:

1/4 cup shallots , peeled and chopped

2 tbs ginger , peeled and chopped

2 tbs lemon juice

2 tbs shredded coconut

1tb jalapeno , diced

1 tb soy sauce

1 tb brown sugar

1 tsp curry powder

Zest from one lemon, minced

3 Tbs canola oil

Pork :

1 pound boneless center cut pork loin chops

Soak 12 inch skewers in water

Slice the satays so that they are about three inches long and about 1/2 tall and an inch wide

Blend all above ingredients except oil in a blender 

With blender running add the oil

Marinate pork strips for about 1 hour

Meanwhile make your sauces

Skewer the marinated pork strips with an accordion fold by skewering in and out longitudinally.Pull it back flat on the skewer after you are done. Save room for a handle however

Get the grill hot and place on grill with skewers hanging the handle end of teh skewer off the heat or grill

Cook 4 minutes each side or until lightly charred

Serve on lettuce leaves with sauces and toss with fresh cilantro leaves
