700 gr. (Approx. 1.5 Lbs.) New potatoes. In the USA we tend to call small wax potatoes new potatoes. The important thing is that, like actual new potatoes, they peel very easily.
150 gr. White onion, sliced or minced
120 ml. Extra Virgin Olive Oil (1/2 cup)
20 ml. Sherry Vinegar (1.5 Tbs.)
20 ml. White Vinegar (1.5 Tbs)
3 Tbs. Finely minced parsley
1 Tbs. Diamond Crystal kosher salt or equivalent in weight
Cover potatoes with water and salt the water generously
Bring to boil then simmer potatoes for 20 minutes or until tender enough for a paring knife to effortlessly penetrate
Drain and cool potatoes to the point where they peel easily
Cut into 1/2-inch pieces or larger depending on your preferred consistency
Add all other ingredients and toss gently though thoroughly
Wait several hours and serve at room temperature
