Shrimp tacos with red cabbage slaw

1/2 red onion, sliced thin stips

1/2 cup white vinegar

1/2 cup water

1 Tbsp sugar

1 tsp salt

1/2 red cabbage, shredded

3/4 cup plain greek yogurt

1/4 cup light sour cream

3 Tbsp cilantro

1 clove garlic

1-2 limes

1 lb shrimp

chili powder

cumin

avocado or guac

japlapenos

tortillas

Pickle onions

  • Slice red onion into thin strips
  • Add to container with half cup of water and vinegar + salt and sugar
  • Let sit for 30min
  • Optional - add sliced jalapenos in there

Make slaw

  • Combine yogurt and sour cream
  • add lime juice, cilantro, garlic grated
  • add salt
  • Slice up the cabbage - you can even use a veg peeler - and add

Cook shrimp

  • Season shrimp as you'd like (recipe calls for chili powder and cumin but I like to add garlic

Serve

  • Serve on tortillas
  • top with guac
