Southwestern roasted corn salad

4 ears corn

1 cup feta cheese, crumbled

1 cup black olives

1 cup cilantro leaves, finely chopped

1 cup green bell peppers, chopped

1 cup red onion, finely chopped

1/4 cup lime juice, fresh

Grill corn until quite charred. 

Remove and scrape individual kernels into a bowl. 

Immediately add feta cheese and toss. Toss in and mix well all other ingredients. 

Taste for salt & pepper. 

For those who enjoy spice, add in and toss an appropriate salsa.
