Lengua Asada (Grilled beef tongue)

1 beef tongue . Not quite cooked as much as a normal beef tongue, perhaps 2 hours . The base should be tender but the tongue should still be somewhat firm.

Lemon juice

Salt

Vegetable oil or lard

Cut the boiled tongue in two parts. The base and the tongue.

Mix together oil, lemon juice and salt and use as grilling marinade and moist rub.

Grill the two pieces over a medium heat grill until tender all over and slightly golden.

Slice into serving pieces and serve with lemon wedges and a salsa or chimichuri.
