Spicy Black Bean & Bulger Salad

3/4 cup chicken stock

1/2 cup fine bulgur

1 cup prepared black beans, rinsed of the bean water they cooked in and then strained.

1 cup cilantro leaves, NOT CHOPPED

8 scallions, finely sliced

1 Serrano pepper, minced

1/3 cup lime juice

1/3 cup extra-virgin olive oil

1 Tbs olive oil for preparing bulger

1 Tbs ground cumin

Bring stock to boil in a pot with a tight fitting lid. Add the bulgur along with salt and 1 tablespoon of olive oil, cover turn off the heat , and let stand for 7-10 minutes. Fluff lightly.

Combine beans, scallions, coriander in serving bowl and toss with vinaigrette made with lime juice, remaining olive oil, cumin, salt and pepper.

Fold in prepared bulger and serve.
